Irish Recipes : Colcannon

Colcannon is a traditional Irish and West Scots dish made from mashed potatoes, cabbage, curly kale, butter, salt and pepper. It can also contain ingredients such as milk, onions, or chives.

It is a cheap and nutritious food, it’s ingredients available all year round. Colcannon made with curly kale is served on Halloween day; the tradition is to hide coins and rings in it for children to find as part of the days celebrations.

Halloween day is the day that the souls of the dead walk among the living, sometimes seen or their presence felt. Perhaps this popular Irish/Scot tradition of concealing treasures in the children’s colcannon was created to convince children that the souls of their deceased relatives had left gifts for them from beyond the grave?

Ingredients:
Potatoes mashed
Curly kale
Butter
Salt and pepper to taste

Preparation:
Boil and mash the potatoes
Boil the kale
Mash together
Add salt and pepper to taste
